We use fresh milk and cream from our 'Sixpenny' herd of
Holstein Friesian cows to make our ice cream, which gives a truly rich creamy
taste, and a freshness that is unequalled in this area.
Being RSPCA Freedom Food accredited gives our customers
confidence that Bill's stockmanship and the welfare of our animals is of a
high standard. The cows are fed on balanced rations, most of which
is home grown, including grass and maize silage. For the last two
years we have held the title of 'The Best small herd in Essex'.
Since I started making ice cream in April 2001, I have
sought to use the best ingredients I can find, using local fresh fruit
when in season. To this end, I now buy Vanilla pods from a select
Vanilla Garden in Southern India. Honeycomb from Ireland, and have
had Stem Ginger especially cut for me.
The ice cream is handmade - literally! Many hours
are spent preparing fruit, toasting nuts, and potting up. I am
continually looking to develop and improve recipes, and apologise if
demand sometimes outweighs supply.
Farmer Bill's and Hadley's ranges are available at good
farm shops, delicatessens and farmers markets in Essex and Suffolk.
